Baking Red Velvet Cupcakes with Cooking Plus

Yesterday was an exciting day for me and also Cindy whom I brought along to Cooking Plus located at Vineth Bakery for Red Velvet Cupcakes baking class, organized by Urbanesia, Jakarta Lifestyle City Directory of Hotels, Restaurants, Shopping and Businesses.

The class was hosted by Olivia Wongso, daughter of  Indonesia's famous culinary expert William Wongso.

It's fun to learn how to make Red Velvet cupcakes together with other 18 participants.  All of us were given one set of utensil with the ingredients and divided into a pair to work on the cupcakes.

The step by step process:

First step:
Butter 60 gr
Oil 30 gr
Sugar 200 gr
Egg 1 pcs
Vanilla Extract 1/2 tsp
Using an electric mixer on a medium-high speed, whisk together butter, oil, sugar until combined (light and pale). Add an egg, beat until well incorporated.

Second step:
Red Food Coloring 2 tbs
Cocoa Powder 1 tbs
Mix food coloring and cocoa powder, then pour into batter mixture. Beat until well mix.

Buttermilk
in a 1 cup measurement, add 2 tbs of lemon juice then fill the cup with milk. Leave it about 1/2 hour before using.
Third step:
All Purpose Flour 165 gr
Salt 1/2 tsp
Buttermilk 1/2 cup
Baking Soda 1/2 tsp
Cider Vinegar 1/2 tsp
Combine flour and salt together. Add flour mixture in three batches, alternating with two additions of buttermilk, and whisking well after each. Stir together the baking soda and vinegar in a small bowl (it will foam), then add quickly the mixture to the cupcake batter.

Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 minutes at 160ยบ Celsius. Remove from oven and let it cool completely before frosting.

Cream Cheese Frosting
Butter 75 gr
Cream Cheese 115 gr
Icing Sugar 240 gr
Vanilla Extract 1 tsp

Shift icing sugar, then combine all ingredients together in a mixing bowl. Beat until light and fluffy. Frost each cupcake with the cream cheese frosting. Garnish the top of frosting with some sprinkles.

Rainbow Cupcakes

A few months ago, I was tempted to make rainbow cupcakes. I used Wilton coloring with the result as the below picture.
I showed it to my friend and she said that the colors are not really attractive since it's too soft. I guess she actually meant my rainbow cupcakes look dull, hehehe. Well, Wilton's colors produce their best for pastel colors and there's no any other food colorings to find here in Jakarta, better than Wilton's product - I think.

I noticed that many of the American food bloggers are using Americolor product for food coloring. So, when Lynn told me that she's coming to visit me in July and asked me what I wanted from the States, the first thing that came up in my mind was those beautiful Americolor food colorings.

FYI, Lynn was a Singaporean blogger who is living in the States. I've known her for more than 4 years in the blogsphere but not until last year, when I finally met her in real person for the first time in Bali. We had a wonderful time traveling, shopping and eating together around Bali for 3 days.

Anyway, Lynn canceled her trip to Jakarta for the security reason (remember the Jakarta's bombing at those 5 stars hotels last July?), thus she sent me a parcel.

Well, the parcel already reached Jakarta 2 weeks ago but there's a problem to get it out from the Indonesian Customs office and also the Post office. I had to face many silly bureaucracy procedures. At last, I got the parcel out from the Post office yesterday *so relieved*

In the parcel, it contains the book "Eat, Pray, Love", 1 bottle of Omega 3 supplement, 1 set of gourmet writer plus extra 2 pens, and 12 bottles of Americolor. Yay!!! Thank you so much, dearie!
So... today, I couldn't wait to try out to make the rainbow cupcakes again and this time, I'm using the Americolor, yipeee!!!

Rainbow Double Vanilla Cupcakes from Lick The Bowl Good by Monica H

Ingredients:
1 ½ sticks (12 tbsp) unsalted butter, room temperature
1 ¾ cups of sugar
2 large eggs
2 Teaspoons of pure vanilla
1/2 Vanilla Bean, scraped (optional)
½ teaspoon of salt
2 ½ teaspoons of baking powder
2 ½ cups of flour
1 ¼ cups of milk

Directions:
- In a medium bowl, mix together salt, baking powder and flour. Stir to combine then set aside.
- Cream butter and sugar together in a large bowl, then add in eggs, one at a time. Add vanilla extract and the seeds of half a vanilla bean. Beat until well combined.
- Alternately add the dry ingredients and the milk to the butter/sugar mixture. Start with flour, end with flour.
- Divide the batter into 6 bowls. Color your batter with food coloring (red, orange, yellow, green, blue and violet).
- Spoon or pipe your batter in thin layers into the muffin cups, being careful not to mix the colors.
- Bake at 375 degrees for 18-20 minutes for 20 regular cupcakes.

The result *big grin*

Btw, I only got 16 mini cupcakes, not so sure why *blur*

Bunny cupcakes by Selby


I got my first order for cupcakes!!! Yes, a friend asked me to make 50 cupcakes for her daughter's birthday that will turn to be 7 years old. When I asked what kind of theme should be the cupcakes, her request was simple, as long as it's pink and cute then her daughter will like it.

First, I was thinking to make little bears with pink fondant as the base on the top of the cupcakes but then at the end, I decided to make bunny fondant with pink/purple/white flowers and the base is green as it resembles to grass. Bunnies love to play in a garden where there're a lot of grasses and little flowers around, rite? hehehe...

Well, to make the bunnies, it's quite time consuming but I had fun :)


This is how the bunny cupcakes look in the box. Mom helped me to make the boxes that can contain 25 cupcakes in each box.
The middle part, I left it empty to put the birthday candle.

Hopefully, my friend's daughter will like her birthday bunny cupcakes *crossing fingers*

Selby's Fondant Cupcakes

I'm not sure what's got into me but lately, I just wanted to be creative and play with sugar fondant again.

So, this morning, I baked cupcakes again using the same recipe as the previous one. Not bad, huh? ;)

If last time, I made sugar fondant more into dolls,

then, today is more related to Easter theme.

Selby's Cupcakes

Last year, I’d been trying to make cupcakes but then always no success because my cupcakes were sinking all the time although I tried the cupcakes recipes from those famous bakers. I actually already gave up on making cupcakes.

Yesterday, I got inspired to make cupcakes again after I read Big Boys Oven post. He made these beautiful yoghurt cranberries cupcakes with white chocolate cream.

From BBO’s recipe, I made some modifications because I don't have confectionery sugar, no yoghurt, no sun dried cranberries, then since I don't self-raising flour so I added baking powder. Hmmm.... it sounds that this is not following BBO's recipe at all, hahaha....

Ingredients:

220g unsalted butter, softened
160g sugar
1 tsp vanilla powder
3 medium eggs
220g flour
1 tsp baking powder
100 ml milk



Everyone who loves to bake, definitely know the basic method of making batter which is mixing the butter and sugar first until light and fluffy then when adding the eggs, it supposedly one in a time after each addition. And guess what kind of silly thing I did? I mixed the butter, sugar, vanilla power and the eggs altogether at the same time! Oops!!!

If other people bake cupcakes between 20 – 30 minutes, my cupcakes were almost 1 hour in the oven! But, hey! Surprisingly... my cupcakes were not sinking at all!!! Wooohooo… finally, I made it! So happy :)

As for the topping, again.... I didn't follow BBO's recipe because no white chocolate and icing sugar. Thus, I melted the dark chocolate and put the small flowers which I made it from sugar fondant on the top of my cupcakes.

Not bad, huh? ;)
