Tukang Roti Pikulan

In the mornings, I usually will bump into this man who sells breads with a carrying pole. I can't imagine how much weight that he has to carry it  on his shoulder every day but for sure, it is quite heavy.

He is not only selling bread loaf and breads with filling (chocolate, coconut, peanut jam, cheese) but also some doughnuts.

A bread costed only Rp. 2.000 (14 cents USD).
It's tasted more like the old school homemade bread.

Le Bakery & Cafe in Biloxi, MS

I was so curious when my host mother told me that we were going to the best pastry in town where there is always a long line in front of the shop every morning. She drove me and her two daughters to this Le Bakery & Cafe in Biloxi.

The owner of this pastry and sandwich shop is an old lady from Vietnam. She and her daughter run the shop. They were very friendly.

The filled croissants.

Loaves.

There are also Vietnamese snacks.
Coconut sweet rice , Bahn Bao - steamed pork dumpling, Chinese star cakes - sweet rice & mung beans,  Banana sweet rice cake with coconut cream.

Shelby and Emily were having their breakfast from Le Bakery.

As for me, I had two croissants for my breakfast - cherry cream cheese and lemon. Believe me, even two croissants were not enough because they were so good :)

Starbucks Autumn Blend 2012

For this Autumn season, Starbucks is launching their "Autumn Blend" coffee beans. It's a blend of coffees from Sumatra and the Antigua region of Guatemala. Expertly roasted to create a full-bodied brew with subtle spice and nuances of herbs, lemon cedar and cocoa.  It tasted earthy, herbal with a hint of lemon.

This Autumn Blend was created to pair well with the below savory breads and sweet cake.

Smoked Chicken Apple on Sundried Tomato Foccacia - Rp. 34.000
Totally enjoyed this yummy tasty bread. Preferable to be eaten cold :)

Jalapeno Cheese Roll - Rp. 15.000
It's bread with cheese and onion that has a spicy taste from the Jalapeno.

Purple Yam Coconut Cake - Rp. 28.000
Since I'm not a coconut nor cream lover thus it's hard for me to enjoy this cake.

A unique drink from Starbucks. It's espresso and steam milk, blended with mocha sauce and toffee nut flavored syrup and topped with whipped cream, caramel sauce, trubinado sugar and sea salt that deepens the rich flavors of the coffee. It will be available starting on 13 September 2012.

Panaderia Pantoja Bakery

The first bakery shop of Panaderia Pantoja in Tanuan City.

On my arrival in Tanauan City, I was brought to the Panaderia Pantoja Bakery. I learned that Panaderia Pantoja Bakery started in 1950 by the couple named Aurelio and Celinda Pantoja. It's when they inherited a house in Tanauan City, Batangas and found a Pugon (brick oven) in the backyard which inspired Aurelio to start a bakery business. Now after 6 decades, Panaderia Pantoja Bakery is one of the province’s largest bakeries with franchisees and branches in different towns in Batangas, Laguna and Manila.

Panaderia Pantoja’s products are Yeast Breads (Pandesal, Asado Siopao, Hamburger/Hotdog Buns, Breads, etc.), Sweet Dough Breads (Cheese Rolls, Ensaymada, Malolos, Pan de Leche, Pandesiosa, Brownies, Banana cake, etc.), Biscuits (Banana chips, Butter cookies, Garlic sticks, Chicaron, etc.), Cake Rolls (Choco roll, Mango, roll, Mocha roll, Ube roll, Brazo de Mercedes), and specialty Cakes.

The board sign:
The Pandesals (Filipino bread roll) are freshly baked from the Pugon (brick oven) every morning 4. 30 am to 7.30 am

The cakes

Malolos Special Big - Peso 123

Mini Ensaymada - Peso 16

Cheese Rolls

On the top is butter, sugar and grated cheese. Inside the bread is a stick of cheese.

And guess what? My surprise birthday cake was from the Pantoja Bakery. It's very simple but totally delectable! The cake was so soft, light, fluffy and I really like the butter cream on it. I usually avoid  eating butter cream but the butter cream on this cake was so good! Seriously, I hope that I will have my birthday cake from Pantoja Bakery again next year :)

Tukang Cakwe (You Tiao/ Chinese fried bread stick)

Here in Indonesia, You Tiao (油条) - Chinese fried bread stick/crullers, is more known as Cakwe. We eat it normally with congee for breakfast or deep it into sweet sour chili sauce as snack.

I remember when I was in China, everytime I ordered cakwe for my breakfast, it's always served with soy bean milk.
The cakwe dough is made from flour, water, alum and salt.

Deep fried.
Cakwe

As you can see, a cakwe/you tiao is two long fried bread stick together. It's interesting to learn the story behind of it from my favorite book "Origins of Chinese Food Culture".

According to this book, during the Song dynasty, there's a famous and well respected General named Yue Fei. He fought and won against the invader - Jin Dynasty.

But then, in year 1142, the unfair Prime Minister Qin Hui together with his wife Wang Shi, executed Yue Fei without any reason.

The people of Song Dynasty got so angry but they couldn't do anything thus to relieve the anger, a baker made a bread resembles 2 people's shapes that represents Qin Hui and his wife, then deep fried in hot oil.
In the beginning, this fried bread was names as "fried Hui" but later on after Qin Hui passed away, the named changed to "yàu ja gwái" (油炸鬼), which means "oil-fried ghost".
Anyway, these days, the name of this bread has been simplified to "You Tiao" (油条), it means "oil strips".

Little buns and a big thank you

You all might have noticed that my food blog has a new look :)

I owe a big thank you to these 3 wonderful food bloggers who had helped me to make this new look happened.

It started all when LK - Food4-Tots, suggested me to change my header because my old header didn't represent my blog at all (remember the cherry's header?). At the end, it's not only the suggestion of header but also for arranging my side bar to look more neat and also the heading menu. Yes, LK has been very supportive in order to make my blog looks better. Thank you so much for being so supportive, LK! :)

As for the layout format size, Nic- Black Tie, White Lie, had helped me. Thank you for your help, Nic! :)

Now, the one who designed my header blog... Beside of being a food blogger, fusion cook and also a cat lover, he is actually a real designer! Some of you probably can guess it already ;) Yup, it's Criz Lai - Criz Bon Appetite! He was willingly to design the lovely header for me just an overnight although he is very busy at the moment. Thanks a lot, Criz! It's very kind of you to design it specially for me! I really love the new header!

My mom loves to bake bread. Almost every week, my mom bakes bread. She really loves to bake bread. 2 days ago, she got a recipe from her friend to make little buns and tried it out.

Little Buns
Ingredients:
900gr high protein flour
100gr low protein flour
240gr sugar
20gr salt
200gr butter
125gr powder milk (full cream)
30gr instant yeast
5 gr bread improver
4 egg yolks
100gr cold milk
320gr cold water
15gr emulsifier

Directions :
- Mix all - the flour with sugar, milk powder, bread improver, emulsifier, egg yolks in a large bowl
- Add cold milk, salt, butter, stir it until a dough form
- Pour cold water
- Knead the dough until smooth and elastic
- Let the dough "rest" for 15 minutes
- Shape the dough into ball size (about 15 gr)
- Let the dough "sit" again for 10 minutes
- Add filling like chocolate, cheese (optional)
- Let the dough "stay" at a warm temperature for about 50 - 60 minutes
- Brush the dough balls with egg
- Bake in the oven 180 Celsius for about 30 minutes (or until golden brown)
- Transfer to a wire rack and serve warm if possible :)

Note:
- my mom tried not to use the emulsifier and only depend the dough raise on the instant yeast; it didn't work out at all thus she had to add the emulsifier.
- you might notice that the buns are not shining because they were not brushed with egg.
- you can add filling if you wish into the dough balls (my mom added chocolate stick)
