Brownies n cookies - Cute Christmas

Christmas day is already in the corner! Something fun to do during Christmas is sharing our joy by giving Christmas presents to those who we care.
I believe the brownies cake shaped as a tree, covered with green icing fondant and some Christmas ornaments made also from fondant on it plus "cute doggy" cookies, can become a cute Christmas present ;)
Ready to deliver :)
I hope the ones who received this Christmas present will feel the joy and enjoy it.

Merry Christmas 2010 & Happy Holidays, Everyone!

Christmas Stollen

It's a tradition for my mom to bake Stollen every Christmas. Sometimes, my mom would make stollen as Christmas presents or she got some orders from our friends

Stollen is a traditional Christmas cake from Germany, made from yeast dough containing dried fruits, chopped almonds and powdered with icing sugar. Stollen usually shaped like a folded oval but this time, my mom made it different shape like fruit cake based on a request.

Christmas Stollen recipe from Zwickau
The recipe is to make three or four loaves. If it’s too much, then you can make 1/2 of the recipe.

For the day before:
5½ cups sultanas
5 tablespoons vanilla sugar
16 tbsp rum
4½ cups butter
3⅓ cups sweet almonds, skinned and finely chopped
¾ cup bitter almonds, skinned and finely chopped
1⅓ cups candied lemon peel, coarsely chopped
½ cup candied orange peel, coarsely chopped

For baking day:
5½ lbs. flour, sifted
1 cup yeast
1½ cups sugar
4 cups milk
juice and peel of two lemons
Butter and powdered sugar for the glaze

The day before:
Wash the sultanas two to three times and drain them. Then mix them with the vanilla sugar and the rum. Put the butter in a pot. Take out the almonds and the candied fruits. Leave the sultana mixture, the butter, the almonds and the candied fruit out overnight to warm to room temperature.

On baking day:
1. Pour the flour into a bowl and make a crater in the middle.
Mix together the yeast, three teaspoons of the sugar and ½ of the milk. Pour the mixture into the flour crater and work the whole thing into a dough. Cover and let rise in a warm place.

2. Mix the dough with the sugar, the vanilla sugar and the fresh lemon juice and peel. Work the butter (not melted) into the dough using as much tepid milk as necessary to make a smooth, but not sticky dough. Knead the dough until it pulls away from the sides of the bowl.

3. Then fold the almonds, candied fruits and sultanas into the dough until they are distributed throughout. Cover the dough again and put it in a warm place to rise for two hours.
Then knead it again and let it rest for another 30 minutes. Now divide the dough into 2 kg (4 lb.) lumps and form them into the shape of bread loaves. Using the back of your hand press a deep furrow all the way down the stollen, dividing the log into two differently-sized loaves. Fold the narrow length over the broader length.

4. Bake on a well-greased baking pan at 175° C (350° F) for 1¼ - 1½ hours or until golden.

5. Brush the stollen immediately after baking with melted butter. Sprinkle with icing sugar before serving.

Since these Stollens are based on request and look not like the authentic stollen, therefore, decorations on them become essential ;)

The decorations made from fondant.

Bunny cupcakes by Selby

I got my first order for cupcakes!!! Yes, a friend asked me to make 50 cupcakes for her daughter's birthday that will turn to be 7 years old. When I asked what kind of theme should be the cupcakes, her request was simple, as long as it's pink and cute then her daughter will like it.

First, I was thinking to make little bears with pink fondant as the base on the top of the cupcakes but then at the end, I decided to make bunny fondant with pink/purple/white flowers and the base is green as it resembles to grass. Bunnies love to play in a garden where there're a lot of grasses and little flowers around, rite? hehehe...

Well, to make the bunnies, it's quite time consuming but I had fun :)

This is how the bunny cupcakes look in the box. Mom helped me to make the boxes that can contain 25 cupcakes in each box.
The middle part, I left it empty to put the birthday candle.

Hopefully, my friend's daughter will like her birthday bunny cupcakes *crossing fingers*

Selby's Fondant Cupcakes

I'm not sure what's got into me but lately, I just wanted to be creative and play with sugar fondant again.

So, this morning, I baked cupcakes again using the same recipe as the previous one. Not bad, huh? ;)

If last time, I made sugar fondant more into dolls,

then, today is more related to Easter theme.

Little flowers

A pink bunny with blue flowers.
A happy ladybug.

Carrots in purple basket.

Tadaaaa... A box of fondant cupcakes.
Do you think I can start to receive orders now? ;D

Selby's Cupcakes

Last year, I’d been trying to make cupcakes but then always no success because my cupcakes were sinking all the time although I tried the cupcakes recipes from those famous bakers. I actually already gave up on making cupcakes.

Yesterday, I got inspired to make cupcakes again after I read Big Boys Oven post. He made these beautiful yoghurt cranberries cupcakes with white chocolate cream.

From BBO’s recipe, I made some modifications because I don't have confectionery sugar, no yoghurt, no sun dried cranberries, then since I don't self-raising flour so I added baking powder. Hmmm.... it sounds that this is not following BBO's recipe at all, hahaha....

Ingredients:

220g unsalted butter, softened
160g sugar
1 tsp vanilla powder
3 medium eggs
220g flour
1 tsp baking powder
100 ml milk

Everyone who loves to bake, definitely know the basic method of making batter which is mixing the butter and sugar first until light and fluffy then when adding the eggs, it supposedly one in a time after each addition. And guess what kind of silly thing I did? I mixed the butter, sugar, vanilla power and the eggs altogether at the same time! Oops!!!

If other people bake cupcakes between 20 – 30 minutes, my cupcakes were almost 1 hour in the oven! But, hey! Surprisingly... my cupcakes were not sinking at all!!! Wooohooo… finally, I made it! So happy :)

As for the topping, again.... I didn't follow BBO's recipe because no white chocolate and icing sugar. Thus, I melted the dark chocolate and put the small flowers which I made it from sugar fondant on the top of my cupcakes.

Not bad, huh? ;)

Let's see the step by step on how to make the sugar doll.

It's quite easy to make it as long as you have passion and got the right tools :)
